CMN 2006: The last few times we've made this,
we've increased the number of eggs to 2 (or 3 for a double-batch).
It seems to help with reduce the wateryness that sometimes
occurs.
Ingredients:
1 can creamed corn
1 egg
1/2 cup onion, chopped
3/4 cup milk
1/2 tsp salt
1/4 tsp pepper
saltine crackers, crushed
butter, softened
Directions:
Mix the corn, egg, onion, milk, salt and pepper. Place in a butteredcasserole dish. Mix the crackers and butter; sprinkle over the corn.Bake at 350° for 1 hour; keep covered until the last few minutes.
