CMN: Sept 2003: Used only 1/4 of a red pepper since neither
of us are really fond of pepper. This dish was very rich and definitely a winner!
Ingredients:
1 cup sweet red pepper -- julienned
1 cup sliced fresh mushrooms
1/4 cup chopped green onions
3 garlic cloves -- minced
1/4 cup butter or margarine
2 cups whipping cream
1 teaspoon dried basil
2 boneless skinless chicken breast halves -- grilled, thinly sliced
1/2 teaspoon salt
angel hair pasta -- cooked
Directions:
In a large skillet, saute the red pepper, mushrooms, onions and garlic in
butter. Add the cream, basil, chicken and salt; cook and stir until
slightly thickened. Serve over pasta.
