Sensational Slush

"Colorful and refreshing, this sweet-tart slush has become a family favorite. I freeze the mix in 2- and 4-cup containers so it can be served in small portions for individuals or for the whole family. I also freeze crushed strawberries to make preparation simpler."

CMN, 2005: The first time I made this, I thought it was good, but tasted more like punch than what I expected a "slush" to be. So, when we were about to have a big party, I made a batch and froze half of it (without the soda) in molds; I served it in a punch bowl, with the frozen molds to keep it cold. This recipe does make quite a bit - I ended up combining it in my largest mixing bowl!

Ingredients:
1/2 cup sugar
3 ounces strawberry gelatin powder
2 cups boiling water
2 cups sliced fresh strawberries
1 cup unsweetened pineapple juice
12 ounces frozen lemonade concentrate -- thawed
12 ounces frozen limeade concentrate -- thawed
2 cups cold water
2 liters lemon-lime soda -- chilled

Directions:
In a large bowl, dissolve sugar and gelatin in boiling water. Place the strawberries and pineapple juice in a blender or food processor; cover and process until smooth. Add to the gelatin mixture. Stir in concentrates and cold water. Cover and freeze for 8 hours or overnight.

Remove from the freezer 45 minutes before serving. For each serving, combine 1/2 cup slush mixture with 1/2 cup lemon-lime soda; stir well.
