Notes: These pancakes are not meant to be light
and fluffy, like "typical" pancakes - they are closer in texture to
crepes.
Mixing these in a blender has an advantage. If there is leftover batter, just store it in the refrigerator, and blend again when ready to cook the rest!
Ingredients:
2 cups milk
3 eggs
2 Tbsp sugar
1/2 tsp salt
1 1/2 cups flour
2 Tbsp butter, melted
Directions:
Blend the milk, eggs, sugar and salt in a blender. Add the flour and
butter; blend well. Refrigerate overnight before cooking on a griddle.
