Ingredients:
2 cups grated zucchini
1 cup sour cream
1 chopped onion
1 package stuffing mix (with flavoring)
1 can cream of chicken or mushroom soup (to double - add 1 can soup, 1 can water)
1 grated carrot
salt and pepper to taste

Directions:
Mix all the ingredients together and put in buttered casserole dish.
ORMix zucchini, soup, sour cream, carrot, onion, salt and pepper. Butter a4 to 6-cup casserole dish. Sprinkle half the stuffing mix on the bottom.Add the zucchini mixture. Cover with the remaining stuffing mix.

Bake, uncovered, at 350° F for 30-40 minutes.
